Banana flour has a neutral taste and can be used for baking sweeter baked goods in particular; biscuits, bread, waffles, pancakes and cake. Because the flour is made from unripe plantains, it contains a small amount of natural sugars.
PREPARATION 6 BANANA FLOUR PANCAKES
Split 2 medium eggs. Mix 80 g plantain flour, 200 ml (coconut)milk, 30 ml maple syrup, 2 egg yolks, pinch of salt, 2 g baking powder into a smooth batter. Beat the egg whites until stiff in another bowl. Fold the egg whites into the other batter until smooth. Grease a hot pan and spread some of the batter. Fry the pancake brown on both sides on a moderate heat.
