PREPARATION
Mix the contents of the sachet of almond paste mix in a food processor or mixing bowl with half an egg (or replacer) and 1/4 teaspoon lemon juice. When the paste is well moldable, make a roll (of approx. 3-4 cm) and roll up in cling film. Let the paste rest in the refrigerator for 1 hour. Almond paste will taste better the longer it stiffens in the refrigerator.
GIVE IT A TRY: ALMOND COOKIES
Preheat the oven to 200˚C. Take the roll almond paste out of the fridge and the foil (after at least 1 hour of resting). Roll the roll through granulated sugar so the outside is well coated with sugar. Cut the roll into 1,5 cm thick slices and place on a baking tray with baking paper. Bake for 10 minutes in the preheated oven, until golden brown. The perfect cookie result is hard on the outside, soft on the inside!
