Recipe for Quinoa salad (serve cold):
Amenities (serves 2):
1 cup Quinoa, 2 cups water, 1 avocado, 1 onion (or spring onions), 1 pack feta cheese, tomatoes, olive oil, salt and pepper.
Preparation of the Quinoa:
Take 1 full cup of Quinoa. Rinse the Quinoa in a sieve. Place the Quinoa in the saucepan and add the water (1 cup Quinoa to 2 cups of water). When the water has come to a boil, cook the Quinoa on a low heat for 8 - 10 minutes (Quinoa is done when the tiny germs start to separate from the grains). Most of the water will now have been absorbed by the Quinoa. Sieve any remaining water and leave the Quinoa to cool without a cover.
Preparation of the salad:
Place a salad mix (e.g. with rocket) in a salad bowl. Add: 1 ripe chopped avocado, onion or spring onion, feta cheese, tomatoes. Season with: Olive oil, salt and pepper. Finally add the cooled down Quinoa and mix it with the other ingredients in the salad bowl.
